Ingredients
8 Eggland's Best Large Eggs
1/2 tsp. salt
1/4 tsp. black pepper
4 pieces bacon, cooked and crumbled
1/2 c. milk
1 cup shredded cheddar cheese
Topping
Small or medium black olives, sliced into 4 pieces
6 string cheeses, sliced into thirds and then separated into small strings
Preparation
- Preheat the oven to 350 degrees Fahrenheit. Grease a mini muffin pan or two (you'll need about 48 mini cups).
- In a large bowl, whisk the eggs.
- Add salt, pepper, cooked bacon pieces, milk, and cheddar cheese and stir well to combine.
- Pour 1 full Tablespoon of the mixture into each indentation.
- Bake for approximately 10-12 minutes, or just until egg cups are completely baked through and set.
- Remove from the oven, quickly add two olive eyes and string cheese pieces to each, then return to the oven and bake for up to one minute more so the cheese can adhere to the egg.
- Remove from the oven, let cool slightly, then serve immediately.
