Mini Gougeres

Ingredients
7 Tbsp. Unsalted butter
1 c. water
2 Tbsp. sugar
1/4 c. all-purpose flour
1 tsp. baking powder
Pinch of salt
2/3 c. shredded cheddar cheese
1/3 c. grated parmesan cheese
Preparation
- Preheat the oven to 375°F and line a baking sheet with a silicone mat or parchment paper.
- Bring water, butter, and sugar to a rapid boil in a medium saucepan over high heat.
- Turn the heat to low, add the flour, baking powder, and salt, and immediately start stirring. The dough will come together. Keep stirring for 1-2 minutes. Let the drought sit for 5 minutes to cool.
- Transfer the mixture to a mixing bowl, and beat on medium speed.
- Drop in the eggs, one at a time, while continuing to beat. Beat in the cheese and mix well. Pipe or spoon the dough onto parchment-lined baking sheets.
- Bake for 7-10 minutes, or until they are golden brown.
