Eggland's Best eggs are great in quality and price, and they are versatile for making everything from omelets to baked goods. They help place a quick meal on the table. But, my main reason for using Eggland's Best is its superior nutrition. It's hard to make healthy choices with today's hectic lifestyle. So being able to make a nutritious meal hassle free is so important. My recipe is the "Best Family Recipe", because it’s easy, nutritious, cost effective and the family loves it.

Ingredients

  • 1 cup ground Tortilla Chips (Great way to use broken chips left in a bag)
  • 9 Large Eggland's Best eggs
  • 1 can of Seasoned Black Beans
  • 1/2 small onion diced
  • 1 small tomato seeded and diced
  • 1 jalapeno, minced, seeds and membranes discarded
  • 1 cup of shredded Mexican cheese blend
  • 1 tsp Mexican seasoning (i.e. taco, fajita)
  • Butter (to coat pie plate)

Preparation

  1. Coat pie plate with butter.
  2. Sprinkle 1 cup of ground tortilla chip crumbs on the bottom of the pie plate.
  3. Top tortilla crumbs with 3 scrambled Eggland's Best eggs that will soak in and form the crust.
  4. Open 1 can of seasoned black beans and pour off any excess liquid.
  5. Use a fork to remove beans from the can (so as not to take too much liquid) and place the beans on top of the crust, trying to spread evenly.
  6. Sprinkle diced onion, tomato, and minced jalapeno on top of beans.
  7. Scramble remaining 6 Eggland’s Best eggs. Pour over top.
  8. Sprinkle with seasoning.
  9. Sprinkle with cheese.
  10. Bake at 350° F for about 45 minutes until the center is firm.
