Marshmallow Stuffed Hot Cocoa Cookies

Ingredients
6 Tbsp. Unsalted Butter
1 cup Semisweet Chocolate Chips
1 cup Granulated Sugar, divided
2 Eggland’s Best Eggs, large
1 cup Flour
½ cup Cocoa Powder
1 tsp Baking Soda
½ tsp Salt
9 large marshmallows, cut in half
Preparation
- In a microwave-safe bowl, combine butter and chocolate chips. Microwave for 30-second increments until fully melted, stirring after each increment.
- To the bowl, add ¾ cup sugar, and eggs, and whisk until smooth. Add in cocoa powder, baking soda, flour, and salt. Use a rubber spatula and stir until smooth.
- Cover bowl with plastic wrap and chill in the refrigerator for 1 hour.
- Place the remaining ¼ cup sugar in a small bowl and set aside.
- Line 3 sheet trays with parchment paper. Use a 1-ounce scoop to scoop balls of dough, or eyeball two Tablespoon size pieces of dough.
- Flatten out to a disk and place half a marshmallow in the center. Wrap the sides of the dough around the marshmallow to encase it. Coat the cookie with granulated sugar and place on the sheet tray.
- Continue to stuff and coat, leaving the cookie about 3 inches apart.
- Preheat oven to 350°F.
- Bake for 8 minutes.
- Remove from oven and cool cookies on the tray for 30 minutes.
