Maple Sausage Breakfast Cake

Ingredients
- Butter or oil for greasing pan
- 1 pound Sausage (we love this recipe with pork maple sausage)
- 2 cups all-purpose flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 Eggland’s Best eggs (large)
- ¾ cup buttermilk
- ½ cup butter, unsalted, melted
- ¼ cup maple syrup
- 1 cup blueberries
Preparation
Preheat oven to 350F.
Grease a 9x13in baking dish.
Cook the sausage in a skillet, breaking up the meat as it cooks. Drain fat before setting aside.
In a large bowl, whisk together flour, sugar, brown sugar, baking soda, baking powder, salt
In a large bowl, whisk together eggs, buttermilk, melted butter, and maple syrup.
Fold wet ingredients into the dry ingredients.
Stir in blueberries and sausage.
Transfer batter to greased dish and bake for about 30 to 40 minutes or until it is completely done in the center.
Serve with maple syrup, yogurt, and fresh fruit.
