Make This Recipe

Ingredients

1 cup unsweetened almond milk (or other dairy-free milk)

1/2 cup pure pumpkin puree

2 large egg whites

1 tbsp maple syrup (or sweetener of choice)

1/2 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground ginger

Pinch of ground cloves (optional)

Ice cubes (optional, for serving)

Preparation

  1. In a small saucepan, combine the almond milk and pumpkin puree over medium heat.
  2. Stir in the cinnamon, nutmeg, ginger, and cloves (if using). Heat the mixture until it’s warm, but not boiling, about 5 minutes.
  3. In a separate bowl, whisk the egg whites until soft peaks form.
  4. Slowly fold the whipped egg whites into the warm pumpkin mixture, stirring gently to combine.
  5. Stir in the vanilla extract and maple syrup. Adjust sweetness to taste.
  6. Remove from heat and let cool slightly.
  7. Serve warm or over ice for a chilled version.
  8. Garnish with a sprinkle of cinnamon on top before serving.
