Ingredients
- 3 Eggland's Best Eggs (large)
- 1 cup fresh spinach
- 1/2 cup chopped tomatoes
- 1 ounce shredded cheddar cheese
- 1 pinch chopped parsley, as desired
- 1 teaspoon butter
Preparation
- Mix eggs with fork.
- Add butter or spray to frying pan and bring to medium heat.
- Add eggs. As eggs are cooking, take fresh spinach and place in bottom of a bowl or plate.
- Chop fresh tomatoes and measure out your choice of cheese.
- Check eggs and flip when ready. Add salt and pepper for seasoning.
- When eggs are ready, slide them onto the plate on top of the spinach.
- Top with cheese, then tomatoes, then herbs.
