Hot Chocolate Cookies
These hot chocolate cookies are crisp on the edges and full of gooey marshmallow in the center! They’re made with real hot chocolate mix and are perfect for the holidays!

Ingredients
1 cup butter (melted)
1 cup brown sugar
1/2 cup sugar
2 Eggland's Best eggs, large
1 tsp. vanilla extract
2 1/2 cups flour
1/4 cup cocoa powder
1 hot chocolate packet
2 tsp. baking soda
2 bittersweet chocolate bars
1 (10 oz) bag of marshmallows
Preparation
- Preheat your oven to 350°F and line your cookie sheets with parchment paper.
- In a large bowl, add your melted butter, sugars, eggs and vanilla extract. Whisk until fluffy and foamy.
- Next, add your flour, cocoa powder, hot chocolate packet and baking soda. Fold everything together to form a dough.
- Scoop out your cookie dough into 2 inch balls, press one marshmallow and one piece of chocolate into the center of each one and wrap your dough around the fillings. (It’s ok if a little bit of the marshmallow is peaking out). Continue with the rest of your dough, marshmallows and chocolate.
- Place your cookie dough balls on your baking sheets a few inches apart and bake in the oven for 10 minutes.
