Holiday Caramel Soufflé (Meringue Based)

- Preheat oven to 400°F
- Using a whisk mixer, in a bowl, add Egglands best eggwhites and whip till stiff peaks. Slowly add sugar 1 tablespoon at a time to prevent clumps. Add 2 tablespoons of caramel (optional) Whip to stiff peaks.
- Place in an oven-safe ramekin and shape with an off-set spatula. I use the funnel method!
- Place in the oven for 7-8 min until golden brown and fluffy.
- Add caramel drizzle on top & Serve immediately.
Recipe Notes: This can not be made ahead. After it comes out of the oven it needs to be served immediately as it will collapse if you wait too long.
