Ingredients
1 cup old fashioned oats
3/4 cup almond flour
3/4 Tsp ground cinnamon
1/2 Tsp Baking soda
1/2 Tsp Kosher salt
4 Tbsp light butter, room temperature
1/2 cup granulated monk fruit or sugar substitute of your choice
1/4 cup Eggland’s Best 100% Liquid Egg Whites
1 Tsp clementine or orange zest
1 Tsp pure vanilla extract
1/4 cup almond slices
1/4 cup dried tart cherries
Preparation
- Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
- Using a hand mixer, combine the sugar and butter in a bowl, beating until light and fluffy (about 3 minutes).
- Add the egg whites, vanilla and clementine or orange zest.
- In a separate bowl, combine the flour, oats, cinnamon, salt and baking soda.
- Fold the dry mix into the wet mix and combine completely. Add the cherries and almonds and fold to combine.
- Using an ice cream scoop for cookies that are the same size. Form the dough into small balls and place on the baking sheet. Bake in the oven for 10 minutes.
- Let the cookies cool for 5 minutes and then transfer them onto a rack to cool completely. Enjoy!
