Ingredients
Rice:
- 2 cups long grain rice, cooked
Burger:
- 1 pound ground beef (85% fat)
- ¼ cup diced onion
- Salt & Pepper to taste
- 2 tablespoons canola oil
Gravy:
- 1 tablespoon unsalted butter
- 1 ½ cup low-sodium beef broth
- ¼ cup diced onions
- 1 teaspoon Worcestershire sauce
- 1 tablespoon flour
Eggs:
- 4 Eggland’s Best eggs (large)
- 1 tablespoon unsalted butter
- 2 roma tomatoes, seeded and diced
Preparation
Cook rice to package directions and set aside.
Burger:
Mix ground beef, diced onion, and salt & pepper together; form four 4 patties and set aside.
Heat a large cast-iron or oven-proof pan over high heat.
Add canola oil to the pan and place in the patties.
Cover pan with lid, and cook 4-6 minutes on each side.
Remove burgers and keep warm.
Gravy:
In the same pan, add butter to the burger drippings.
Over medium high heat, saute onions until they begin to brown and caramelize, approximately 5-6 minutes.
Add broth and Worchester sauce and bring to a boil; reduce down for 3 minutes.
Slowly add flour to the sauce, stirring constantly until sauce is thickened.
Season with salt & pepper; set aside and keep warm.
Eggs:
Heat canola oil in a nonstick pan over medium heat.
Gently crack eggs into pan and cook 4-5 minutes or until whites are set and the yolk is firm.
To serve:
Place ½ cup rice on plate, top with burger and one egg; drizzle gravy over eggs and garnish with tomatoes.
