Hash Brown Egg Strata
This recipe is an old family tradition for the holiday season. It's a wonderful savory breakfast to share with loved ones to ring in the new year in the tastiest way possible. This festive egg dish uses hash browns as the base and is filled with colorful peppers & crispy bacon. I predict it will quickly become a family favorite.

Ingredients
1/2 cup unsweetened coconut milk - or dairy-free milk of choice
10 - 12 Eggland’s Best eggs, large
1 green pepper - diced
1 red pepper - diced
1 onion - diced
5 + slices of Bacon - crumbled
4 cups hash browns (about half a bag of frozen hash browns)
2 Tbsps Ghee butter - or your choice of cooking oil
Salt & Pepper
Preparation
- Preheat oven to 350°F.
- Grease a 9 x13 or large casserole dish.
- Lay bacon on pan and cook on low heat until perfectly brown. Place on paper towels/plate and set aside.
- Next, add 1/2 tbsp ghee to pan on medium/high heat. Add hash browns and cook until golden brown then spread on the bottom of your dish.
- Add your diced peppers and onions to the pan and cook through.
- Add peppers, onions, and crumbled bacon to the potatoes.
- Whisk together eggs, milk, salt & pepper and pour over the rest of the ingredients in the dish.
- Bake for 30 + minutes - until the center is cooked.
- Slice up and enjoy with your loved ones!
