Ham and Cheese Frittata

Ingredients
- 2 tablespoons olive oil
- 1/2 pound thickly sliced deli sliced ham, finely chopped
- 12 Eggland’s Best eggs (large)
- Salt and pepper, to taste
- ¼ cup milk
- 1 cup shredded sharp yellow cheddar, divided
Preparation
Preheat oven to 400 degrees F.
Over medium-high heat, add olive oil to an oven safe, 12’’, nonstick skillet.
Once the oil is hot, add in ham and cook, stirring occasionally, until ham is crispy and browned on all sides, about 4-5 minutes.
While ham is cooking, crack 12 eggs in a large bowl, season with salt and pepper, and whisk until very well combined.
Whisk in milk and half the cheese.
Pour the egg mixture over the ham. Using a plastic spatula, pull the eggs away from the edges once or twice and let the eggs set on the stove for 1 minute.
Top with remaining shredded cheese and bake 13-15 minutes or until the middle is set and top is beginning to brown.
Remove from the oven and loosen the edges with a spatula.
Carefully slide the frittata onto a serving platter or board. Slice into 8 wedges and serve.
*If packing for lunches, let the frittata pieces come to room temperature before wrapping them up.
