Green Chile Quiche

Ingredients
- 4 Eggland's Best eggs
- 1/2 pound ground beef, extra lean
- 1/2 pound pork sausage
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 4 ounces whole green chilies, drained, seeded and divided
- 2 cups shredded cheddar cheese, divided
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- Tabasco sauce, to taste
Preparation
Preheat oven to 350 degrees F.
In a large, non-stick skillet, crumble beef and sausage and cook over medium heat, stirring until meat is browned.
Add onion and garlic; cook until onion is softened; drain all liquid from the pan and set aside.
Line a 13 X 9 baking dish with half of the chilies; top with 1 1/2 cup of cheese and meat and top with remaining chilies.
Beat eggs and flour until smooth; add milk, salt and Tabasco sauce; blend well.
Pour egg mixture over ingredients in baking dish.
Bake uncovered for 40 minutes, or until a knife inserted into the center comes out clean.
When finished, remove from oven and sprinkle remaining 1/2 cup of cheese on top; let stand for 5 minutes before serving.
