Grated Egg Toast

Ingredients
2 Eggland's Best Large Eggs
1 avocado
1 lemon, halved
Kosher salt, to taste
Freshly ground black pepper, to taste
2 slices whole wheat or multigrain bread
1 tablespoon crumbled feta cheese
5 to 6 grape tomatoes, halved
¼ teaspoon chopped fresh dill
Preparation
1. Place the eggs in a large saucepan and cover them with an inch of water. Bring to a boil, then cover saucepan and reduce heat to low, cooking for 10 minutes. Remove eggs from heat and place them in a medium-sized bowl filled with ice water. Let them cool for 20 to 25 minutes. Peel shells from eggs.
2. Remove flesh from avocado, discarding the pit. Place the flesh in a bowl, add juice from half of the lemon and season to taste with salt and pepper. Use a fork to mash the avocado.
3. Toast bread, then spread the mashed avocado on one side of each slice. Using the smallest holes of a box grater or a microplane zester, grate one egg atop each slice of bread. Top with crumbled feta, grape tomatoes and fresh dill. Season to taste with salt and pepper. Serve immediately.
