Grandma's Kolacky Cookies
Originating from the Czech Republic, this Bohemian holiday cookie recipe was a tradition passed down from my daughter's great great grandmother Josephine. With delicious fruit filling on a soft sugar cookie, they are guaranteed to clear the plate!

Ingredients
1/2 lb unsalted butter, softened
3 cup flour
1 cup powdered sugar
4 Eggland’s Best eggs, large, yolks only
3/4 cup heavy cream
2 tsp baking powder
1 tsp vanilla
pinch of salt
2 cups canned poppy seed, apricot, raspberry filling
Preparation
- First, mix 2 cups flour and 8oz butter. Work well together and set aside.
- Separately, mix together 1 cup flour, powdered sugar, baking powder, egg yolks, heavy cream, vanilla and salt.
- Finally, add both mixtures together to make the dough.
- Wrap in parchment paper and let cool in the refrigerator for at least a few hours.
- Roll out a section of dough and cut with a whiskey glass or 2-inch cutter. Firmly press indentation using use thumbprint to the center and add 1 tsp of filling.
- Bake at 350°F for 12- 15 mins or until a light golden brown on the bottom.
- Let cool and sprinkle with powdered sugar.
Recipe Notes: You can make the dough ahead of time and leave in the fridge overnight. Flatten dough before placing in the refrigerator to make it easier to cut and roll out.
