Ingredients

4 Eggland’s Best Eggs, large

1/2 cup water

1/2 cup milk

1 stick unsalted butter

Large pinch of coarse salt

1 cup all-purpose flour

3 1/2 ounces shredded Gruyère cheese (1 cup)

Freshly ground pepper

Freshly grated nutmeg

Preparation

  1. Preheat the oven to 400°F.
  2. Line 2 baking sheets with parchment paper.
  3. In a medium saucepan, mix and bring to boil the water, milk, butter and salt. Stir in flour and mix with a wooden spoon until a dough forms. Lower heat and keep stirring the dough until smooth.
  4. Cool the dough in a bowl for 1 minute and then beat it with a mixer for two to three minutes. Add the Eggland’s Best Eggs to the dough, one at a time until fully incorporated. Mix in some extra cheese and a pinch of black pepper and nutmeg.
  5. Fill a pastry bag fitted with ½ inch tip with the dough. Pipe tablespoon-sized dough portions onto baking sheets spaced 2 inches apart. Sprinkle with cheese and bake for 20 minutes, or until golden brown and puffed. Serve at any preferred temperature.
