Ingredients
3 cups gluten free flour
1 teaspoon baking powder
1 teaspoon salt
1 tsp gingerbread spice
1 tsp cinnamon
1 cup butter, softened
1 cup brown sugar
1 Eggland's Best egg, large
2-4 tablespoons milk
1 tablespoon vanilla extract
3 tablespoons butter, melted
Decorating sugar
Preparation
- Preheat oven to 350 degrees.
- In a medium bowl whisk the gluten free flour, baking powder, gingerbread spice, cinnamon and salt.
- In a stand mixer with a paddle attachment, combine the softened butter and brown sugar until light and fluffy.
- Mix in the egg, milk and vanilla until combined.
- Slowly mix in the flour mixture until crumbly and fully mixed.
- On a flour lined parchment, roll out the dough until about 1/2" thick.
- Use cookie cutters of choice and place on a cookie sheet a few inches apart.
- Bake in the oven for 6-8 minutes until the edges start to brown and remove and cool on a cooling rack until fully cooled.
- Once cooled brush with melted butter and dip into decorating sugar.
- Serve with your favorite holiday beverage like hot cocoa or steamed milk.
