Gluten-Free Cheese Crackers
These gluten-free cheese crackers are baked with Eggland's Best eggs, which are nutrient-rich, making them kid friendly! These healthy cheese crackers are served best as after-school snacks for fussy kids and picky eaters.

Ingredients
2 1/2 cups blanched almond flour
1/2 cup oats flour
1 cup Colby jack cheese (shredded)
1/4 cup cream cheese (softened)
2 Eggland's Best eggs,, large
2 teaspoon everything bagel's seasoning
1 teaspoon fresh rosemary (minced)
1 teaspoon salt
1/2 teaspoon crushed black pepper
1/2 cup beet hummus (for serving)
Preparation
- Preheat oven to 400° F. Line a baking sheet with parchment paper and set aside.
- In a microwave-safe bowl, add Colby jack cheese and cream cheese. Microwave for a minute until just melted.
- Transfer the melted cheese to a large bowl, add eggs, mix until mixed together. It looks clumpy but it will mix once adding dry ingredients.
- Sift the dry ingredients such as almond flour, oats flour, bagel's seasoning, minced rosemary, salt , pepper over cheese & egg mixture.
- Transfer the dough mixture to a flat surface or over silicon mat. Cover it with a parchment papered using rolling pin, flatten the dough to 1/8 to 1/4 inch thickness, then remove the parchment paper.
- Using different shaped cookie cutters, cut into desired shape crackers. Transfer the cut-out crackers into a prepared baking sheet and bake for about 8-10 minutes until becomes golden brown.
- Once baked, remove the baked crackers from oven and let it sit on the counter for 10 minutes, and serve immediately with homemade or store-bought beet hummus or your desired dip. Store in an air-tight container for up to a month.
