Garden Style Egg Sandwich

Ingredients
- 2 Eggland’s Best Hard-Cooked Peeled Eggs
- 1 100% whole wheat long roll
- 4-6 thin cucumber slices
- 4 tomato slices
- sliced radish (optional)
- 1/3 cup mixed greens (rinsed)
- 1/4 teaspoon dried dill
- 1/4 teaspoon dried cilantro
- 1 tablespoon hot & sweet mustard (optional)
- sliced onion (optional)
Preparation
Layer the greens, sliced eggs and onion on one side of the roll.
Sprinkle eggs with cilantro (optionally with turmeric and hot & sweet mustard).
Place tomato slices, cucumber slices and radish slices (optional) on top of previous layers.
Place second roll slice on top. Serve immediately or pack to take with you.
