Ingredients
2 Large Eggland’s Best eggs
1/3 cup unsweetened apple sauce
1/3 cup honey
1 cup whole wheat flour
1 cup all-purpose flour
1 Tbsp baking powder
1 tsp salt
2/3 cup whole milk
1/2 cup fresh or frozen blueberries
1/2 cup fresh or frozen raspberries
2 ripe bananas, mashed

Preparation
- Preheat oven to 400 degrees. In a large mixing bowl mix together mashed bananas, unsweetened applesauce, and honey. Lightly beat the Eggland’s Best eggs and add to the banana mixture.
- Mix together the flour, baking powder, and salt. Add the flour mixture to the mixing bowl a little at a time, alternating with a little bit of the milk.
- Rinse the frozen blueberries and raspberries and pat dry with a paper towel. Add to the bowl and gently fold to combine.
- Using a mini muffin pan, fill the muffin cups 2/3 full with the batter. Bake for 8-10 minutes or until the muffin tops are golden and a toothpick inserted into the center comes out clean.
