Make This Recipe
Ingredients
Sugar Cookies
2 Eggland's Best eggs, large
1/2 cup unsweetened applesauce
1/2 cup honey or pure maple syrup
1/2 tsp. almond extract
1 1/4 cups almond flour
1 1/4 cups gluten-free oat flour (I use homemade)
1 tsp. baking powder
1/2 tsp. salt
1/4 cup sprinkles
Frosting
8 oz. dairy-free plain cream cheese
1/4 cup honey or pure maple syrup
1/2 tsp. pure vanilla extract
Preparation
Sugar Cookie Dough
- Whisk together the eggs in a large bowl then add in the remaining wet and dry ingredients. Mix together until smooth then pour the batter into an 8-inch square pan lined with parchment paper.
- Preheat the oven to 350°F and let the batter rest while the oven preheats. Once the oven is preheated, bake for 25 minutes. Remove from the oven once a toothpick inserted in the center comes out clean. Allow the bars to cool completely in the pan.
Frosting
- Mix the cream cheese, sweetener of choice, and vanilla in a medium-sized bowl until smooth (you may need to let the cream cheese soften before using depending on the kind you use).
- Remove the sugar cookie bars from the pan and frost generously with frosting. Top with additional sprinkles then slice and enjoy!
- Notes: To ensure the recipe is refined sugar-free, use sprinkles without added sugar. For a festive touch, use different colored sprinkles for different occasions. Keep the leftovers in the fridge for up to five days.
