French Toast Roll-ups
It is back-to-school time again and the perfect time to plan some easy, fun recipes! These french toast roll-ups are perfect for busy mornings when the kids need something to grab and eat with their hands really quickly. You can prepare them in advance and keep them in the refrigerator, and then heat them up in the morning while you get the kids ready for school. Ingredients
10 slices whole-wheat bread
4 Eggland's Best eggs, large
½ cup milk
1 tsp ground cinnamon
Optional:
Nut butter
fresh fruit
Preparation
- Preheat a non-stick skillet over medium heat.
- Beat the eggs, milk and cinnamon together in a bowl.
- Remove the crusts (save for bread crumbs!) and roll out each bread slice as flat as you can.
- Spread nut butter and fill with chopped fruit and roll up tight.
- Dip each roll in the egg mixture fully and shake off excess, then transfer to a skillet greased with butter or oil.
- Cover and cook for 3-4 minutes, occasionally moving around to cook all sides evenly until golden brown.
