Flourless Peppermint Chocolate Cookies
A fudgie, light cookie that bakes up flaky and delicious! These double chocolate, flourless cookies are sprinkled with the perfect amount of peppermint chunks.

Ingredients
1 1/2 cups powdered sugar
1/3 cup unsweetened cocoa powder
1 pinch of sea salt
6 Tbsp. Eggland's Best 100% Egg Whites
1 tsp vanilla extract
1/2 cup chocolate chips
1/3 cup crushed peppermint
Preparation
- Heat oven to 350°F.
- Line a baking sheet with parchment paper.
- In a mixing bowl, add sugar, cocoa, egg whites, salt, and extract. Whisk until fully combined. Fold in chocolate chips.
- Spoon 1 tablespoon of batter on the baking sheet.
- Space cookies out by 3" each. Bake for 9 minutes.
- Sprinkle each with an even amount of crushed peppermint.
- Allow cookies to cool, enjoy!
