Eggnog Protein Waffles
Using egg nog (of course), Eggland's Best eggs, cottage cheese and oats, these waffles are tasty, more protein rich than your average waffles and made super simply in the blender!

Ingredients
1 c. cottage cheese
1 c. eggnog
2 tbsp melted butter (can use coconut oil alternatively)
1 tsp vanilla extract
1.75 cups rolled oats
1 tbsp cinnamon
1 tsp baking powder
1/4 tsp sea salt
coconut oil (optional for coating the waffle iron)
Preparation
- In a blender combine the eggs, cottage cheese, eggnog, melted butter, vanilla, rolled oats, baking powder and sea salt and blend until smooth.
- Let the batter sit for at least 10 minutes, or up to overnight before cooking into waffles.
To Cook Waffles:
- Heat your waffle iron, add a touch of coconut oil to the waffle iron and pour in the batter (mine uses about 2/3 cup batter for each waffle – follow your waffle iron's directions).
- Cook until your waffle iron lights up as done (every waffle iron is different).
- Repeat with the remaining batter.
- Enjoy!
