Eggnog Cookies with Glaze

1 Eggland’s Best egg, Large
1 cup salted butter, softened
½ cup granulated sugar
¼ cup packed brown sugar
1 teaspoon vanilla extract
½ teaspoon rum extract
2 cups all-purpose flour
1 teaspoon ground nutmeg
Glaze Ingredients
1 ½ cups powdered sugar
½ teaspoon vanilla extract
½ teaspoon ground nutmeg
3-4 tablespoons ready-made eggnog
Preparation
For the Cookies:
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar for 1 minute until smooth.
- Add the egg, vanilla, and rum extract, and mix until fluffy.
- Gradually add the flour and nutmeg, mixing on low speed until combined.
- Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes, or until the bottoms are slightly golden. Allow to cool completely before icing.
For the Glaze:
- In a bowl, whisk together the powdered sugar, vanilla, nutmeg, and 2 tablespoons of eggnog.
- Add more eggnog, one tablespoon at a time, until you reach a smooth, slightly thick consistency.
- Spoon the glaze over the cooled cookies and spread it slightly with a spoon.
