Ingredients

Cookie Ingredients

1 Eggland’s Best egg, Large

1 cup salted butter, softened

½ cup granulated sugar

¼ cup packed brown sugar

1 teaspoon vanilla extract

½ teaspoon rum extract

2 cups all-purpose flour

1 teaspoon ground nutmeg

Glaze Ingredients

1 ½ cups powdered sugar

½ teaspoon vanilla extract

½ teaspoon ground nutmeg

3-4 tablespoons ready-made eggnog

Preparation

For the Cookies:

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar for 1 minute until smooth.
  3. Add the egg, vanilla, and rum extract, and mix until fluffy.
  4. Gradually add the flour and nutmeg, mixing on low speed until combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 12-15 minutes, or until the bottoms are slightly golden. Allow to cool completely before icing.

For the Glaze:

  1. In a bowl, whisk together the powdered sugar, vanilla, nutmeg, and 2 tablespoons of eggnog.
  2. Add more eggnog, one tablespoon at a time, until you reach a smooth, slightly thick consistency.
  3. Spoon the glaze over the cooled cookies and spread it slightly with a spoon.
