Egg White Scallion Pancakes
Inspired by the Tik Tok Tortilla Trend, this is an Asian American take with scallion pancake, pork floss, chili oil, and Eggland's Best liquid egg whites! This recipe is super customizable, so feel free to add any fillings or skip any fillings that you don't like. Also, if you don't have access to a local Asian grocery store, try making the scallion pancakes from scratch! There are many recipes online, but the only ingredients required are flour, green onion, oil, and salt. Enjoy!

- Heat 1 tbsp cooking oil on medium heat for each scallion pancake
- Cook scallion pancake for 2-4 minutes on each side, depending on the instructions for the scallion pancake used. Remove from pan and set aside
- Add 1 tbsp cooking oil and liquid egg whites
- Cook for one minute (adjust as needed) and flip when ready. Fold the egg white omelet in half, then cut down the middle.
- Cut a slit from the edge to the middle of the scallion pancake. This should create four equal sections or quadrants.
- Fill each quadrant with a different filling: egg whites, chili oil, pork floss
- Fold the quadrants over until you have a quesadilla-shaped sandwich *Enjoy!
