16 oz carton Eggland's Best 100% Egg Whites
1/2 cup ricotta cheese
1/2 cup chopped broccoli
1/2 cup chopped bell pepper
1/2 cup grated parmesan (reserve some for topping)
Preparation
- Combine the egg whites and ricotta in a large mixing bowl.
- Prepare the veggies and add into the mixture.
- Stir in the grated parmesan.
- Pour into a greased skillet.
- Preheat the oven to 400 degrees F.
- When ready, transfer the pan into the oven and bake for 20-25 minutes.
- Remove from oven when fully baked and the top is golden.
- Top with extra grated parmesan.
