Ingredients

  • 2 slices whole wheat bread
  • 2 Eggland’s Best Eggs (large)
  • 1 small tomato (sliced)
  • 1 slice reduced-fat swiss cheese
  • 1 tablespoon chopped green onions
  • 2 teaspoons sweet & hot mustard
  • 1 dash of dill weed
  • 1 dash of crushed red pepper
  • 1 teaspoon olive oil

Preparation

Heat olive oil in pan and cook eggs “sunny side up” with dill and red pepper.

Toast whole wheat bread and spread with sweet & hot mustard.

Arrange tomato slices on whole wheat bread slices.

Cut cheese slice in half diagonally and place one half on each tomato slice.

Place one egg on each tomato and cheese slice. Top with green onion.

Microwave for 30 seconds or until cheese is melted.
