Fiesta Brunch Cups
This easy brunch recipe is perfect for gatherings big and small! Made with puff pastry, mild cheddar cheese, Eggland's Best eggs and bacon bits, this is a recipe the whole family will love!

Ingredients
1/2 cup shredded mild cheddar
2 sheets puff pastry (thawed)
13 Eggland’s Best Eggs
1/4 Cup Bacon Bits
Chives {optional}
Pinch of salt and pepper
Preparation
- Prepare a muffin tin by spraying each well with nonstick cooking spray and preheat oven to 375 degrees F.
- Roll out puff pastry until thin, then cut into nine equal pieces. {Repeat with other puff pastry sheet until you have 12 pieces.} Place one in each well of muffin tin, making sure to press it against the bottom and sides. Allow the top edges to hang over.
- Fill each cup with a small sprinkling of cheddar cheese
- Crack one egg into each cup
- Sprinkle bacon bits over the eggs- you can customize the amount depending on how much you love bacon!
- Brush the bits of puff pastry that are still exposed with an egg wash, made from 1 beaten Eggland’s Best Egg.
- Bake for 20 minutes and check for desired doneness. If you like a runny yolk, they should be done about now. If you like your eggs a little more cooked, you can bake them for another 3-5 minutes depending on your oven or until set
- Sprinkle with {optional} chives, salt and pepper. Enjoy!
