Egg & Avocado Recovery Wafflewich

Ingredients
Waffle:
- 1 cup gluten-free all-purpose baking mix
- 1/2 teaspoon baking soda
- 1 teaspoon turmeric powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon sea salt
- 1 Eggland's Best Egg (large)
- 1 cup dairy-free milk
Wafflewich:
- 3 Eggland's Best Eggs (large)
- 2 teaspoons chives, chopped
- 1/2 avocado, sliced
- Lettuce leaf
- Sriracha, if desired
Preparation
Preheat waffle iron.
Whisk together mix, baking soda, spices, and sea salt.
Add in egg, melted coconut oil, and dairy-free milk.
Pour into waffle iron. Close and cook until iron dictates that is done; about 5-7 minutes.
While waffle is cooking, heat a greased skillet and then whisk 2 eggs with chives together. Pour into skillet.
Cook until set then flip and cook for another minuted.
Fold and place onto a plate. Scrambled and cook other two eggs.
Assemble waffle, egg, avocado, and lettuce. Then top with more chives and sriracha, if desired.
