
Easy Mexican Eggs

This fun recipe tastes as good as it looks!
Ingredients
- 16 oz salsa
- 16 oz can of black beans, rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon lime juice
- 8 Eggland's Best Eggs (large)
- 8 corn tortillas
- 1/4 cup fresh cilantro, chopped
- 1/2 tablespoon olive oil
Preparation
Mash beans with a fork and mix with ground cumin and lime juice.
Cook eggs sunny side up in olive oil until set.
Meanwhile, heat tortillas in a pan until warm.
Finally, spread beans on tortilla and top with eggs, salsa and cilantro.
