Avocado oil spray
2 slices of white bread
1/3 cup Eggland's Best 100% Liquid Egg Whites
1 medium avocado
A dash of salt
A dash of pepper
100% lime juice
Preparation
- Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Slice the avocado thinly and drizzle with lime juice to prevent browning. Set aside.
- Lightly spray a non-stick skillet with avocado oil spray and heat over medium heat.
- Pour egg whites into the preheated skillet. Season with a dash of salt and pepper to taste. Cook until the egg whites start to set around the edges. Use a spatula to gently fold the edges towards the center, allowing the uncooked egg to flow to the edges. Continue cooking until the egg whites are fully set and lightly golden brown on the bottom. Then flip and cook briefly on the other side until fully cooked.
- If desired, toast the slices of white bread until golden brown.
- Place the egg whites on one slice of white bread. Layer with avocado slices. Drizzle additional lime juice on the avocado slices for extra flavor. Season with more salt and pepper if desired.
