Dark Chocolate Raspberry Brownies

Ingredients
- 3 Eggland’s Best Eggs (large)
- 2 ripe avocados
- ¾ cup coconut sugar
- 1 tablespoon pure maple syrup
- 2 teaspoons pure vanilla extract
- ¼ teaspoon salt
- 6 oz dark chocolate
- ½ cup cacao powder
- ½ cup whole-wheat flour
- 1 pint fresh raspberries
Preparation
- Preheat the oven to 350 degrees F, line an 8 x 8 inch pan with parchment paper and set aside.
- Combine the avocados, coconut sugar, maple syrup and vanilla and salt by using a food processor, hand mixer or stand mixer and place in medium-large mixing bowl.
- Place all of the dark chocolate except for a small handful (set aside to sprinkle on top of baked brownies) in a microwave-safe bowl and microwave in thirty-second intervals, stirring each time, until smooth and melted through.
- Combine the melted chocolate to the mixing bowl and mix until completely blended.
- Add the eggs and continue to mix adding in the cacao powder, flour, raspberries, and continue to mix until everything is mixed together smoothly.
- Spread the brownie mixture into the pan and bake for 30 minutes or until set.
- Remove from oven, let cool and then sprinkle remaining chopped dark chocolate on top.
