Creamy Easter Cookie Bars
These cookie bars are simple, creamy, and delicious. They feature a melt in your mouth cookie topped with cream cheese frosting. They are elevated with the use of Eggland's Best eggs, and are sure to please!

Ingredients
3 Eggland's Best Eggs
1/2 cup salted butter
1 1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon sour cream
3 ounces cream cheese
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt For frosting
3 cups powdered sugar
1/2 cup butter (softened)
8 ounces cream cheese (softened)
1 teaspoon vanilla
Preparation
- Preheat oven to 350°F
- Spray either a 13x9 or jelly roll pan with cooking spray (for thicker bars use 13x9)
- In large bowl cream together sugars, butter, cream cheese and sour cream.
- Mix in Eggland's Best eggs and vanilla
- In a separate bowl whisk together flour, salt and baking powder
- Slowly mix in dry ingredients to wet and then spread evenly in greased pan
- Place in oven for 20-25 minutes until edges are light golden brown
- While cookies bake, prepare frosting: Mix butter and cream cheese until smooth, add in vanilla
- Slowly add in powdered sugar until smooth
- Add a couple drops food coloring (if desired), and mix
- Once cookies are cooled: spread frosting evenly over bars, slice and decorate with sprinkles and any other embellishments.
