Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 TSP baking powder
1/2 TSP salt
2 Eggland's Best eggs, large
1/2 cup unsalted butter, melted
1/3 cup buttermilk
1 TSP vanilla extract
1 1/2 cups fresh cranberries
1 cup white chocolate chips
1 1/2 cups powdered sugar
2 TBSP milk
Sugar coated cranberries, to garnish (optional)
Preparation
- Preheat the oven to 350°F (175°C). Grease a 10 or 12-inch cast-iron skillet.
- In a medium bowl, mix cranberries with a tablespoon of flour and set it aside.
- To a large bowl, add the remaining flour, sugar, baking powder, and salt. Mix it and set it aside.
- In a separate bowl, add the @Eggland's Best cage-free eggs, melted butter, vanilla extract, and buttermilk. Beat well with a whisk or hand mixer.
- Add the dry ingredients to the wet ingredients in batches and mix until just combined.
- Fold in the cranberries, along with white chocolate chips.
- Pour the batter into the prepared skillet, spreading it evenly.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the skillet for 10-15 minutes before transferring to a serving plate.
- Meanwhile, prepare the icing by combining powdered sugar and milk in a medium bowl until it forms a flowy consistency.
- Slice the cake and drizzle the prepared icing over the cranberry cake and enjoy.
