Ingredients

4 Eggland’s Best eggs, large

2 large flour tortillas

1/2 cup bell pepper (diced)

1/2 cup onions (diced)

1/2 cup shredded cheddar cheese

2 tablespoons milk

1 tablespoon olive oil

Salt and pepper to taste

Salsa (Optional for serving)

Preparation

  1. Dice the bell peppers and onions. Shred the cheddar cheese if not pre-shredded.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the diced bell peppers and onions. Sauté for about 3-4 minutes until the vegetables are tender.
  3. In a bowl, whisk together the eggs and milk. Season with salt and pepper. Pour the egg mixture into the skillet with the vegetables.
  4. Stir continuously until the eggs are fully cooked and scrambled, about 3-5 minutes.
  5. Warm the tortillas in a microwave or on a skillet for a few seconds to make them pliable.
  6. Place half of the scrambled eggs and veggie mixture onto each tortilla. Sprinkle with shredded cheddar cheese.
  7. Roll the Burrito: Fold in the sides of the tortilla, then roll it up from the bottom, tucking in the sides as you go to secure the filling.
  8. Slice the burrito in half and serve with salsa on the side if desired.
