Ingredients
4 Eggland’s Best eggs, large
2 large flour tortillas
1/2 cup bell pepper (diced)
1/2 cup onions (diced)
1/2 cup shredded cheddar cheese
2 tablespoons milk
1 tablespoon olive oil
Salt and pepper to taste
Salsa (Optional for serving)
Preparation
- Dice the bell peppers and onions. Shred the cheddar cheese if not pre-shredded.
- Heat the olive oil in a non-stick skillet over medium heat. Add the diced bell peppers and onions. Sauté for about 3-4 minutes until the vegetables are tender.
- In a bowl, whisk together the eggs and milk. Season with salt and pepper. Pour the egg mixture into the skillet with the vegetables.
- Stir continuously until the eggs are fully cooked and scrambled, about 3-5 minutes.
- Warm the tortillas in a microwave or on a skillet for a few seconds to make them pliable.
- Place half of the scrambled eggs and veggie mixture onto each tortilla. Sprinkle with shredded cheddar cheese.
- Roll the Burrito: Fold in the sides of the tortilla, then roll it up from the bottom, tucking in the sides as you go to secure the filling.
- Slice the burrito in half and serve with salsa on the side if desired.
