Ingredients
4 cups bread, cubed
3 Eggland's Best Large Eggs
1 cup milk
⅓ cup sugar
1 tbsp vanilla extract
1 tsp cinnamon
Topping, ½ tsp cinnamon + ⅓ cup sugar
Preparation
- In a bowl, mix together the topping of cinnamon and sugar and set aside.
- Preheat the oven to 350 degrees and spray a 12 cup muffin tin with nonstick spray. Add the eggs, milk, sugar, vanilla, cinnamon, allspice and nutmeg into a mixing bowl. Mix until fully incorporated.
- Add the cubed bread to the bowl and mix until combined. Scoop the mixture into the muffin tin and sprinkle the cinnamon sugar topping on top.
- Bake for 20-30 minutes until slightly golden brown and remove from the oven. Enjoy your muffins with syrup.
