Ingredients

1 (9-inch) pastry pie crust

1 cup light corn syrup

½ cup brown sugar

½ cup granulated sugar

4 Eggland's Best eggs, large

1 1⁄4 cups mini chocolate chips

1 cup chopped pecans

1⁄2 cup butter, melted

1 teaspoon vanilla extract

Preparation

  1. Preheat oven to 350 degrees.
  2. Press the pastry pie crust firmly into a greased 9-inch pie plate.
  3. In a large bowl, beat the corn syrup, sugars, and eggs with an electric mixer at medium speed until combined.
  4. Mix in the mini chocolate chips, pecans, melted butter, and vanilla.
  5. Pour the pie filling into the prepared crust.
  6. Bake for 50 to 55 minutes, or until the filling has set. If the filling isn’t set - cover with foil and bake in 5-minute increments.
  7. Cool completely on a wire rack before slicing. Serve with ice cream or whipped cream.
