Ingredients
- 4 Eggland's Best eggs, hard cooked
- 2 cups Romaine lettuce, chopped
- 2 cups fresh spinach
- 1/4 cup Vidalia onion, chopped
- 1/2 cup cherry tomatoes, halved
- 4 slices turkey bacon, cooked and crumbled
- 4 oz. low sodium ham, julienned
- 4 oz. turkey breast, julienned
- 4 oz. low-fat Swiss cheese, julienned
Preparation
Hard-cook eggs; cool and peel.
Wash lettuce and spinach leaves thoroughly; cut lettuce leaves into medium-size pieces and arrange both on a plate.
Cook turkey bacon on stovetop in medium size skillet or in microwave; cool completely, crumble and set aside.
Chop onion, cut cherry tomatoes in half and arrange on top of lettuce.
Cut eggs into quarters and arrange on top of lettuce.
Cut turkey, ham and cheese into thin strips and lay across eggs.
Sprinkle bacon pieces on top; serve with your favorite dressing.
