My Gram taught me that family and love is cooking. The original brownie recipe that has been in my family for over 100 years we always baked together. I took this recipe and brought it up to another level. Eggland’s Best stands for family quality and love in what you bake, and I use that to bring joy into my own family. My gram would be proud.

Ingredients

1 cup granulated sugar

1 cup brown sugar lightly packed

3 Eggland’s Best eggs, large, room temperature

3/4 cup cocoa powder

1 cup flour

1 teaspoon salt

1.5 cups dark chocolate chips

1 cup unsalted butter, melted

1 tbsp coffee

1 tbsp vanilla extract 15mL

1/4 cup candied bacon, chopped

1/4 cup Maraschino Cherries, chopped

Preparation

Candy Bacon:

  1. Take 4 slices of thick-sliced bacon, sprinkle a light coating of brown sugar over slices. Bake at 375 degrees for 25 minutes or until brown. Cool and chop into small pieces.

Brownies:

  1. Preheat the oven to 350° F and prep an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, combine melted butter, Eggland’s Best eggs, vanilla extract, and coffee, then mix together well.
  3. Add the white and brown sugars to the mixture and whisk together well.
  4. Sift cocoa powder, flour, and salt into the bowl and mix until just combined.
  5. Toss in chocolate chips, Maraschino cherries, and candied bacon and fold into the batter.
  6. Add batter to pan and smooth to the edges. You can add more chocolate chips to the top before baking if desired.
  7. Bake for about 30 minutes or until the center is just set. The center should not wiggle when the pan is moved.
