Caramel Oatmeal Chocolate Chip Cookie Bars

Ingredients
1 cup quick oats
1 1/4 cup all purpose flour
1/2 TSP baking powder
1/2 TSP kosher salt
1/2 cup salted butter, room temp
1 cup light brown sugar, lightly packed
1 Eggland's Best egg, large + 3 TBSP Eggland's Best Liquid Egg Whites
2 TSP vanilla extract
3/4 cup caramel
1/2 cup semisweet chocolate chips
3/4 cup semi sweet chocolate chips
3/4 cup pecans, finely chopped
Preparation
- Preheat the oven to 350 and prepare a square baking pan.
- Combine oatmeal, flour, salt, and baking powder in a bowl. Set the bowl aside. In a separate bowl, cream butter and sugar together. Add eggs and Eggland's Best Liquid Egg Whites and vanilla extract. Cream together until smooth.
- Fold the wet ingredients into the bowl with the dry ingredients. When the dough is well combined add the chocolate chips.
- Spread 2/3 of the dough into the bottom of a prepared square baking pan. Bake for 7 minutes. Remove the pan from the oven. Sprinkle chocolate chips and chopped pecans over the cookie. Then drizzle a layer of caramel over.
- Take the remaining dough and scoop 1-2 tablespoon-sized dollops and spread them over the top into flat disks. Bake for another 20 minutes.
- Remove the cookie bar from the oven and let cool for 25-30 minutes before cutting and serving.
