Ingredients

2 - 4 Eggland's Best eggs, large

3 Bell Peppers

1 Garlic Clove

1/4 Yellow Onion

8 Red Potatoes

3 Bacon Slices

Cheese (optional)

Preparation

  1. Cut the tops off the bell peppers and remove the seeds. Place them in a 350-degree oven for 20 minutes, leaving them uncovered.
  2. Chop the onion, mince the garlic, and cut the potatoes into small bite-sized pieces.
  3. Cook bacon and sausage until done, and set aside
  4. Beat 2 - 4 eggs and scramble to desired fluffiness
  5. Bring bell peppers from the oven and start filling them with the fillings that were just prepared
  6. Top with cheese (optional)
  7. Place back in the 350 degree oven and cover with foil for 20 additional minutes. Remove from oven. Serve and enjoy
