Ingredients
2 - 4 Eggland's Best eggs, large
3 Bell Peppers
1 Garlic Clove
1/4 Yellow Onion
8 Red Potatoes
3 Bacon Slices
Cheese (optional)
Preparation
- Cut the tops off the bell peppers and remove the seeds. Place them in a 350-degree oven for 20 minutes, leaving them uncovered.
- Chop the onion, mince the garlic, and cut the potatoes into small bite-sized pieces.
- Cook bacon and sausage until done, and set aside
- Beat 2 - 4 eggs and scramble to desired fluffiness
- Bring bell peppers from the oven and start filling them with the fillings that were just prepared
- Top with cheese (optional)
- Place back in the 350 degree oven and cover with foil for 20 additional minutes. Remove from oven. Serve and enjoy
