Ingredients
12 Eggland’s Best eggs, large, beaten
7 oz smoked sausage, sliced into coins
5 slices bacon, chopped
3 cups Yukon Gold potatoes, diced (about 3-5 small potatoes)
1 cup cheddar cheese, shredded
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
3 tbsp green onions, sliced (for garnish)
1 tbsp butter
2 tsp salt
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
2 tsp black pepper
Preparation
- Preheat oven to 350F°
- Chop the bacon into small pieces. Slice the smoked sausage into coins. Dice the Yukon Gold potatoes into bite-sized cubes. Chop the red and green bell peppers. Beat the eggs in a bowl and set aside.
- In a large skillet, cook the bacon and smoked sausage over medium heat until browned and crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced potatoes. Pour in ¼ cup of water to help steam the potatoes and prevent sticking.
- Add the salt, paprika, garlic powder, onion powder, and black pepper. Stir in the chopped red and green bell peppers.
- Cover and cook for 12 minutes, stirring occasionally to ensure the potatoes cook evenly. Once the potatoes are fork-tender, push them to one side of the pan.
- Add 1 tablespoon of butter to the cleared side of the skillet. Once melted, pour in the beaten Eggland’s Best eggs.
- Stir gently, slowly incorporating the eggs with the potatoes. Cook for about 2 minutes, or until the eggs are fully set and cooked through. Turn off the heat.
- Turn off the heat and add the cooked bacon and sausage back into the pan. Mix everything together until well combined.
- Layer the egg mixture in a 3-quart casserole dish, then sprinkle with half of the shredded cheddar cheese.
- Add a second layer of the egg mixture and top with the remaining cheddar cheese. Garnish with sliced green onions.
- Place the casserole in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and garnish with sliced green onions.
