Make this quick and simple breakfast board with eggs two ways, served with pancakes, waffles, fruit, and bacon.
Make This Recipe
Ingredients
4 large Eggland’s Best eggs
1/2 teaspoon olive oil or avocado oil (optional)
1 1/2 tablespoons butter
1/4 cup cheddar cheese
1/2 teaspoon chopped chives
4 large Eggland’s Best eggs, hard boiled, halved
1/4 teaspoon black sesame seeds
salt and black pepper to taste
4 waffles, cooked
4-6 strips bacon, cooked
4 griddle cakes or pancakes
2 cups mixed berries (blueberries, blackberries, etc.)
1/2 cup Maple syrup
Preparation
Prep
In a small bowl, crack the eggs into the bowl and whisk the eggs until blended.
Method
- In a medium non-stick skillet or frying pan over medium heat, add the olive oil and butter. When the butter has melted, add in the eggs from the bowl, and soft scramble the eggs to your liking (about 1-2 minutes), add the cheddar cheese, and salt and pepper to taste. Use a wooden spoon or silicone spatula to swirl the eggs around until the cheese is melted and eggs are cooked to your preference. Switch the heat off. Plate the eggs and garnish with chives.
- Plating the board: On a wooden cutting board or lazy Susan, place the halved hard boiled eggs on the board, season with black sesame seeds, salt, and black pepper. Then, begin to add the waffles, bacon, pancakes, some berries/fruit, and maple syrup on the board. Enjoy!
A chilled option to save time! Make hard boiled eggs ahead and chill in the refrigerator overnight, or 30 minutes before serving.
