Blueberry Keto Mug Cake
This is the perfect Keto blueberry mug cake recipe. It is creamy, sweet, decadent, and completely guilt free! If a vanilla cake and a blueberry cheesecake had a low carb baby this would be it.

Ingredients
2 tablespoons of avocado oil
1 Eggland's Best Large Egg
1 teaspoon of baking powder
1/2 teaspoon of vanilla extract
1/4 cup of unsweetened almond milk
3 tablespoons of stevia in the raw
1/4 cup of coconut flour
2 ounces of cream cheese (softened)
1/4 cup of blueberries
Preparation
- First, add all the wet ingredients to a bowl then whisk them together.
- Now add all the dry ingredients to the same bowl and whisk them in as well.
- Lastly, add in the softened cream cheese and blueberry and whisk one last time.
- Pour the batter into two microwave-safe mugs or small CorningWare dishes.
- Cook in the microwave 1 minute at a time until it is cooked in the center of the top. (Should take about 2 minutes.)
