Ingredients

2 mashed bananas

1 1/2 cups white whole-wheat flour

1 teaspoon cinnamon

1 cup finely shredded zucchini

¼ cup coconut oil, melted

1/3 cup packed light brown sugar

1 Eggland's Best egg, Large

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup blueberries

Preparation

1. Preheat the oven to 350 degrees.

2. In a large bowl, mash the bananas and add in all of the ingredients except for the blueberries. Mix well and once mixed, add in the blueberries and mix them in.

3. Fill a muffin pan with liners and cooking spray. Scoop the batter into the muffin cups. There will be 12 muffins.

4. Bake for 20 minutes until when a toothpick is inserted, it comes out clean.
