Berry Pavlova
This recipe is a light, fluffy meringue topped with your favorite berries! It's the perfect dessert to bring to your loved one's table during the holiday season or any time of year. It's just the right amount of sweet and you can get extra creative with your flavors and toppings!

Ingredients
3/4 Cup Eggland's Best Liquid Egg Whites
Pinch of Salt
1 cup of white sugar
1 1/2 tsp cornstarch
1 tsp white wine vinegar
1/2 tsp vanilla or almond extract
Assortment of berries
Mint leaves
Preparation
- Preheat oven to 250°F.
- Line a baking sheet with parchment.
- In a bowl, (with an electric mixer) combine egg whites and salt - beating and starting off with a slow speed, slowly increasing to high. Continue until peaks form and then add the sugar 1 spoonful at a time until the meringue is stiff and shiny.
- Sprinkle in cornstarch, extract, and vinegar. Fold gently until incorporated.
- Shape meringue into circular disk on parchment paper, making an indent for the berries to sit later.
- Bake for 1 hour 15 minutes and then turn off the oven. Let the meringue cool completely in oven with the door closed.
- Lastly, top with any berries you’d like, fresh mint and then enjoy!
