Ingredients

2 Puff pastry sheets

12 strips of prosciutto

12 Eggland's Best eggs, large

1 cup micro arugula

1/2 cup Parmesan cheese

Salt and pepper to taste

Preparation

  1. Preheat oven to 350 degrees.
  2. Cut the puff pastry dough into 12 even squares.
  3. Fold the edges of the dough to create a tart.
  4. Baste the dough in an egg wash & bake at 350° for 7 minutes.
  5. Remove the dough from the oven & let them cool for 5 minutes.
  6. Once cooled, add a strip of prosciutto, 1 egg, garlic powder, salt & pepper to each tart.
  7. Bake at 350° for an additional 10 minutes or until the egg is completely cooked.
  8. Finish with adding a handful of grated Parmesan and arugula on top of each tart.
