Baked Prosciutto & Egg Breakfast Tart
A flaky puff pastry topped with perfectly cooked eggs and delicate slices of prosciutto

Ingredients
2 Puff pastry sheets
12 strips of prosciutto
12 Eggland's Best eggs, large
1 cup micro arugula
1/2 cup Parmesan cheese
Salt and pepper to taste
Preparation
- Preheat oven to 350 degrees.
- Cut the puff pastry dough into 12 even squares.
- Fold the edges of the dough to create a tart.
- Baste the dough in an egg wash & bake at 350° for 7 minutes.
- Remove the dough from the oven & let them cool for 5 minutes.
- Once cooled, add a strip of prosciutto, 1 egg, garlic powder, salt & pepper to each tart.
- Bake at 350° for an additional 10 minutes or until the egg is completely cooked.
- Finish with adding a handful of grated Parmesan and arugula on top of each tart.
