Ingredients

2 Eggland’s Best Eggs, large

1 clove Garlic

1 tbsp Jalapeno

1/4 cup Sweet onion

12 Tater tots, cooked and crumbled

Salt & Black pepper

1 tsp Butter

Preparation

  1. Preheat oven to 350 degrees and warm skillet over medium high heat.
  2. Melt butter in skillet, stir in onion and jalapeno and cook for 3 minutes until soft.
  3. Stir in garlic and cook for 1 more minute.
  4. Spray two small ramekins with non-stick spray and divide crumbled tots between them.
  5. Stir in and press the onion, pepper and garlic mixture into the ramekins.
  6. Top each ramekin mixture with a Large Eggland’s Best egg and season with salt and pepper.
  7. Bake at 350 degrees in the oven on the middle rack for 5 minutes.
  8. Then broil on high for 5-6 minutes or until the eggs are firm.
  9. Rest for 5 minutes before serving in the ramekin or use a utensil to extract the finished product for plating.
